Tanakazu Wild Boar Butcher
Diary 2011.11.30
Tanakazu Nishimori san spends 100 days as a carpenter, 100 days as a farmer and 100 days as a hunter. For the rest of the year I’m not sure what he does (probably holiday season). I’m also not sure how he orchestrates his time, whether he actually spends 100 consecutive days being a farmer or whether he mixes it all up. I guess being a carpenter he has to take work when he gets it, so he must mix it all up.
His boar meat is mild and excellent. He bleeds it thoroughly because it might be the blood that gives the meat a strong, slightly unpalatable taste.
